Proof of Pie has now opened an American-style sweet pie cafe in the Adelaide CBD.
It is located in the Joinery at 111 Franklin Street, Adelaide, South Australia.

Major Announcement:

UPDATE: Our last day of trading will be Saturday 21st June 2025. The last day for pie pickup will be that same day. As we use up ingredients, we will be removing pies from our menu. We also have limited baking capacity, so if you place an order, wait to hear back from us as to whether your order can be accommodated.

After nearly three and a half years of butter, sugar, flour and a whole lot of heart, Proof of Pie will soon be coming to an end (21st June).

Our lease at The Joinery is finishing up, and—as was always the plan—the building will be demolished to make way for apartments. Our café was an experiment: a pop-up test run to see if our pie-fuelled dream could grow into something permanent.

We hoped we’d grow big enough to bring more people on board and one day move into a new home. And for a while there, it looked promising—mid to late 2024 was our strongest period yet. But when the Christmas holidays hit, people vanished (maybe they were full of pavlova?). That sudden drop, combined with the loss of a major wholesale client, hit us hard. Business didn’t bounce back until late February, and by then, we were skating on very thin ice.

Thanks to our incredibly generous landlord (big love to the Conservation Council of SA) and the patience of our amazing suppliers, we managed to hold on. We streamlined. We hustled. We scrimped and saved. And fora while, it worked. But the truth is: Proof of Pie, in its current form, just isn’t sustainable for our family long-term.

Behind the scenes, Susannah’s been working massive hours, and Lachlan has picked up extra time and responsibility in his other job to keep us going. All this, while parenting four neurodivergent kids and juggling a million spinning plates, has taken a toll on our family and our mental health. We’ve reached the end of our capacity, and now it’s time to make the kind (but hard) choice to stop.

But don’t get us wrong—we still believe in what we created. Adelaide loves American-style sweet pie (just check our Google reviews!). And our quirky little café won hearts with its warm, homemade vibe. In a different economic climate, with better foot traffic and deeper pockets, we think it would fly. But unfortunately, that’s not our reality right now.

So, here’s the plan:

– Proof of Pie will be closing both the café and bakery on June 21st 2025.

– We’ll maintain a very low-key version of the business in case future opportunities pop up—cooking classes, catering, one-off events. Never say never.

– If someone out there wants to carry the torch and give Proof of Pie a new life, we’re open to chatting.

In the meantime, we’re still open and baking our hearts out—so please keep coming in! We’re here, the pies are fresh, and we’d love to see you before we shut the oven door for good.

And we can’t sign off without a very special shoutout to Bec, the friendly face behind most of the top-tier service you’ve experienced at Proof of Pie. Her warmth, professionalism, and good humour have been a huge part of what made this little shop feel like home.

To everyone who supported us, thank you. Truly. Whether you were a regular, a wholesale partner, a cheerleader on Instagram, or just someone who popped in once for a slice of banana cream—you helped make this journey possible.

Taste

Before anything else, we are all about flavour. We don't feel the need to doll our pies up because we know that when you take a bite, the taste will speak for itself.

Authenticity

We aim to create an authentic pie-eating experience that draws from a long line of pie-making experts from our own backyard, the US and beyond. We believe in truthful and meaningful communication and this extends to the way we relate to customers, employees, suppliers, producers and the traditional custodians of the land.

We believe that working with our local community is key to providing a meaningful eating experience. Pies are meant to be shared and we want the community to feel welcome wherever our pies are sold. We try, wherever possible to use produce from our local area.

Sustainability

Our planet is precious and we believe we need to look after it. We try to minimise the use of non-compostable products. Where possible, we use local, South Australian or Australian ingredients and suppliers to minimise food miles.
