THE CAFÉ CLOSED. THE PIE OBSESSION DIDN'T.

Proof of Pie started in December 2021 as a bake-to-order pie business, before opening a physical café in March 2024.

For the first few months we baked from a hired kitchen in Kilkenny, then moved production to Aberfoyle Park, where customers could collect their orders or have them delivered.

Along the way we supplied cafés including b3 Coffee, C.R.E.A.M., Remy's and Appleseed Cafe at different times. b3 was our main wholesale customer, and Proof of Pie was its exclusive food supplier from December 2021 until early 2025.

Our physical café operated from March 2024 until June 2025. We're no longer taking pie orders, but Proof of Pie now has room to become something different: a home for recipes, pie adventures, a guide to excellent pies, workshops and the occasional bit of pie merchandise.
